Meet the Maker – Eric Rodriguez, Head Chef of Te Quiero Mucho
Tell us a little bit about your background and why you became a chef.
I actually started in school, we had 3 options and one of them was cooking. Then I started to cook for myself at home and for my mom. I really like how strict the kitchen can be, sometimes even tough.
After studying at a great culinary school in Mexico, I had various experiences from the food industry to fine dining restaurants.
You’re new to Hong Kong! How are you enjoying this city so far, and the local cuisine?
Yes! So far I like it a lot.
I like Chinese cuisine, and actually, the way they eat here may be similar to the way Mexicans eat sometimes, with very busy dining rooms, families, and lots of noise.
About TQM, what sets it apart from other restaurants?
To be honest, it is not about the cuisine only, it is about the team. The way they care about everything and everyone, from the moment guests arrive, when they take the order, always making sure our guests are comfortable, always taking care of every detail.
Tell us about your menu, what do you love most about it?
It is a traditional Mexican menu. It is not a mixed cuisine. You can almost feel Mexico in the dishes. It is authentic and real Mexican cuisine!
What is your favorite meal to cook?
Typical Mexican fish tacos!
As a chef, how do you keep your employees motivated?
Just be fare with them. If they really care, and give 100% of themselves, I can’t refuse any of their requests or needs. I treat them like I would like to be treated.
