Driven by Ovolo’s trailblazing Plant’d philosophy, both Alibi’s kitchen adds a signature spin to classic Mediterranean favourites. Chargrilled aromas fill the air, decadent desserts adorn plates and hand-picked garden herbs dance with botanical-infused cocktails.

Andrea Gualdi

Director of Food and Beverage, Andrea Gualdi brings an extensive professional level of knowledge and experience having Co-founded “Maybe” Group which owns and manages Maybe Sammy, their Sydney venue; landing number 22 in ‘The World’s 50 Best Bars’ and awarding them with the title of ‘The Best Bar in Australasia 2021’.

Andrea is one of Australia’s brightest and internationally renowned drinks specialist and will be taking Alibi’s drinks offering to the next level.


Shannon Martinez

Shannon has been cooking in kitchens for the past 22 years in Melbourne and is the owner of Australia’s two most prolific plant-based businesses, Smith & Daughters and Smith & Deli.

With a strong hospitality network, and proven tenure in her industry with great success in plant-based dining, Shannon has a foundation for veg food to be taken seriously in some of Australia’s most unconvinced carnivorous chefs and has shown them just how crazy the market for vegan food really is.

Jiwon Do

Jiwon Do is the Executive Chef of Alibi Bar & Dining. Hailing from the award winning Hippopotamus Restaurant in Wellington, New Zealand, Do brings his own unique flair to the restaurant, as a recipient of culinary awards from New Zealand and Korea and a fifth-generation hospitality professional. He has trained as a World Skills Olympic player in Culinary Arts, representing Korea, when he worked in Seoul for the Hilton Hotel Group.

Do’s career in the kitchen was a natural career path to take. “I come from a family of five generations working in hospitality, it is in my blood and I love every minute of it. This heritage and passion has influenced my philosophy as a chef and I believe that when dining out it should always be about enjoyment and making people feel happy. That’s what I strive for,” says Do.

You are able to book online for reservations up to 5 people. For bookings 6 guests and over we require you to be on our Chef’s tasting menu, please send your booking inquiry through to us via email on

The time slots available on Open Table are the seating times we have available. No waitlist.

Can I place an order for take-away?

Unfortunately, we do not offer takeaway service.

I would like to book the set menu but I have certain food allergies. Who can I speak to about this and can this be accommodated?

Do you accept walk-ins?

We do except walk-ins however highly recommend making a booking as we are not able to guarantee we will have tables available.

How do I cancel the booking?

You are able to cancel your booking online through OpenTable up to 24 hours before your booking. Alternatively, please email us on There is a $50 charge per person with cancellations within 24 hours.

You are able to order in room dining through the QR code scan in your room or by calling hotel reception.

What time is the last seating?

Our last seating on Tuesday through to Saturday is 9pm.

Are there options for Vegans and Vegetarians?

In short, Yes! Plant’d By Ovolo is full of vegan & vegetarian flavour. Our menus have been passionately crafted for vegetarians, non- vegetarians and normally-not-veggie-but-sometimes-flexitarians.
