Sydney has always had the bones of a great late-night city. The harbour, hotels, theatres, bars, restaurants and the people. What it has lacked is permission to fully come alive after dark. That’s why this push to support later trading feels important. Not just for hospitality, but for Sydney’s identity itself.

As a beverage business owner, my view is that this is less about excess and more about creating an elevated night-time experience. Drinking culture is changing. People still want to go out, but they are choosing better. Better venues, better atmosphere, better products, better pacing. They want nights that feel considered and memorable, not chaotic for the sake of it.

That shift is good news for the city. It means nightlife can evolve into something more sophisticated, more diverse and more experience-led. The best nights out now are not one-dimensional. They move across hospitality, entertainment and accommodation in a way that lifts everyone involved.
