Chef Alejandro’s unique knowledge was developed through working in kitchens across the world. Whilst perfecting his passion, he has gathered experience in Latin America, Europe, and Asia.
Alejandro’s interest in cooking began in his hometown in Mexico and quickly became his lifelong love. Five years studying gastronomy led him to move to Spain to work in Michelin-starred restaurants, including the heavily acclaimed El Bulli. Choosing to return to Mexico, he lived in the mountains and grew his own seasonal produce, fully appreciating the entire process of creating Mexican cuisine. During this time, he won the National Competition in Culinary Arts Copa Thierry Bluet and gained a diploma from the French Culinary Academy.
In 2015 he decided to take the plunge and move to Hong Kong. Like many of us, he fell in love with the bustling city and its refreshing takes on food. He hasn’t looked back since, creating unique menus in top restaurants, partaking in the organisational committee for the Festival of Taste of Hong Kong.
Fast forward to 2021, Alejandro has joined the Ovolo team and is adding his own authentic touch to TQM’s signature dishes. Fusing his love for his country’s food with his diverse experience, his vibrant flavours are already making waves at TQM.
Zingy signature cocktails, Mexican classics and refreshing Aguas Frescas all feature on TQM’s extensive drinks list. The impressive selection of Mexican beers, artisanal tequilas and mezcal ensures there’s always a party at this cantina!
TQM boasts bold interiors that is punctuated with reclaimed wood and recycled bricks, creating a rustic vibe juxtaposed with vintage illustrations and art. The three-storey bar and restaurant features a showstopping spiral staircase to connect the first and second floors seamlessly. With two fully stocked bars throughout the space, guests can ensure that they have constant and easy access to their drinks at all times.
On the second floor, large communal tables and spacious banquets lend themselves to group revelry. While those seeking a more intimate experience can wander down to the ground and first floor and pull up a pew in a quiet nook, while watching the Sheung Wan streets come to life.

Whether you need catering handled for your work event, home gathering, junk boat party, or indoor / outdoor venues, you name it, we’ll cater it! With three-storeys, our restaurant space is also naturally flexible in usage, with capabilities to host private events on the top floor, sit-down dinners on the first, or full buyouts across the entire restaurant.
